Cheesy Green Bean Casserole Recipe

(Makes a double batch)
Prep: 10min Cook: 20min Bake: 30min

6 cups fresh Green Beans (about 2 lbs)
1-2 cartons Swanson Chicken Broth
2 cups diced Sweet Onions
2 cups sliced Fresh Mushrooms (1 container if pre-sliced)
1 stick Butter
2 (10.5oz) cans Campbell’s Cream of Mushroom Soup
1 can (6oz) French’s Crispy Fried Onions
1 bag (8oz) grated Sharp Cheddar Cheese
2 pinches each Salt, Pepper, Garlic Powder

  1. Preheat oven to 350°
  2. Cut ends off of Green Beans and cut into smaller pieces
  3. Bring Chicken Broth to boil. Use enough to submerge all beans
  4. Boil Green Beans in broth for 15+min
  5. Meanwhile in a large skillet, sauté Butter, Onions, and Mushrooms until just before Onions start to brown
  6. Drain Beans and add them to the Onions and Mushrooms mixture
  7. Add Mushroom Soup, a few handfuls of the Fried Onions, half of the Cheese, and seasonings to taste
  8. Stir well then pour into a greased 13x9 baking dish
  9. (Can be refrigerated at this point until ready to bake)
  10. Bake 30min at 350°
  11. Top with rest of Cheese and Fried Onions
  12. Bake an additional 10min

Guga's Rub

1/4 Cup Salt
1/4 Cup Brown sugar
1/4 Cup Smoked Paprika
1 tbsp Garlic powder
1 tbsp Onion powder
1 tbsp Pepper
1 tbsp Tumeric

Mix all ingredients into a jar.
Shake well.

Pressure Cooked Whole Chicken

Ingredients

  • Whole chicken
  • 1 tbsp chopped rosemary
  • 2 tbsp olive oil for seasoning
  • 1 tbsp olive oil for pot
  • 6 cloves garlic or 2 tbsp minced
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp complete seasoning
  • 1 tsp lemon pepper
  • 1.5 cups chicken or beef broth
  • 2 onions


Instructions

  • Remove anything in the cavity, rinse chicken with cold water and pat dry with paper towels and set aside
  • In a small bowl, combine spices and oil
  • Set stovetop to 5 or 6 and put in the oil
  • Coat the chicken liberally with the spice paste and put a lemon or one of the onions inside
  • Brown the chicken in the pot for 4 minutes on each side
  • Set chicken aside
  • Cut onion into wedges and put in pot to start browning
  • Add broth to pot and scrape any brown bits from the bottom of the pot with a spatula
  • Put the chicken back into the cooker breast side up
  • Close the pressure cooker lid and set the stovetop to high
  • Once the cooker begins to emit steam, reduce the stove to 4.5 and set a timer for 6 minutes per pound of the chicken
  • Once the timer is up, remove from heat and wait for the pressure indicator to go down or wait 10 min
  • Carefully remove lid and place chicken on cutting board to prep

Beef Stew Recipe

Ingredients
  • 2½lb chuck roast
  • 4 carrots
  • 3 potatoes
  • 2 celery stalks
  • 1 onion
  • 2 cloves garlic
  • 1½ cup low sodium beef broth
  • 1/2 cup red wine
  • 1tbsp worcestershire sauce
  • ½ cup flour
  • 1tsp paprika
  • 2-3 bay leaves
  • salt & pepper
  • packet McCormick's beef stew seasoning

Directions

  • Line slow cooker with a Reynolds wrap liner
  • Add vegetables to slow cooker
    • 3 diced potatoes
    • 4 sliced carrots
    • 2 stalks sliced celery
  • Cut 2½lb chuck roast into 1in cubes
  • Heat some olive oil in a large saucepan
  • Working in batches of two handfuls at a time, 
    • toss beef cubes in a gallon ziploc bag full of
      • ½ cup flour
      • All purpose seasoning
      • salt & pepper to taste
    • sauté coated beef in oil until lightly browned then place in slow cooker
  • Once all beef has been browned, in the same saucepan add
    • 1 onion chopped
  • Lightly brown the onions and add to slow cooker
  • In the same saucepan, stir 
    • 1½ cups low sodium beef broth
    • 1 tbsp worscheshire
    • ½ cup red wine
  • Stir until pan is completely deglazed, then pour into slow cooker
  • Add remaining ingredients to slow cooker
    • 2 gloves minced garlic
    • 2-3 bay leaves
    • 1tsp paprika
    • 1 packet McCormick's beef stew seasoning
  • Cook on low 8-10hrs(preferred) or high 4-6hrs 

Meatloaf Recipe


  • Preheat oven to 350º
  • In a medium saucepan, 
    • melt 1 tbsp of butter
    • Chop 1 onion
    • Dice 2 cloves of garlic
  • Lightly brown the onions and garlic in the butter
  • Meanwhile, in a mixing bowl, combine
    • 1.5 lb of ground beef
    • 1 egg
    • 1 cup seasoned bread crumbs
    • splash of worcestershire
    • salt & pepper
    • browned onion mix
  • Pour 1 cup milk into the saucepan and scrape the saucepan bits into it, turning it brown. Pour into the meat mixture.
    • If onion/milk mix is too hot to mix with hands immediately, make topping sauce below while waiting for it to cool. 
  • Place fully combined meat mixture into a lightly greased loaf pan
  • In a small bowl, combine topping ingredients
    • 1/2 cup ketchup
    • 2 tbsp brown sugar
    • 2 tbsp mustard
    • 2 tbsp worcestershire
    • 2 tbsp red wine vinegar
  • Fully cover the meat with topping all the way to the edges
  • Bake for 1 hr
